I observed my Athens host Ada make some Spanikopita. Pretty easy: in a pot, stir some spinach (in our case, frozen), with oil, salt and various types of chopped up onions. Let it cook for a while, adding more oil & salt as needed. When it seems like its done, turn it off and add a block of feta cheese and stir up some more. Take a pan, oil it well, and layer some filo dough- basting it with some beaten eggs. Put the spinach mixture in the middle and then add some more filo on top. Add a little bit of milk to your remaining egg mixture. Pour some oil on top of filo and the remaining egg/milk mixture. Bake in oven for like an hour. (Use google for some more precise directions, ha).







Oh this Greek spinach pie thing is amazing! Isn’t it almost like kookoo-sabzi, the Persian vegetable pancake that you’ve also posted on? I always find them very similar, except for the cheese of course.
